A slow cooker is my favorite way, but you could also infuse on the stovetop in a double boiler (it just takes more babysitting). If you are going to buy a slow cooker temp variables are good to have for sure. I like the Hamilton Beach Stay and Go slow cooker because it clamps closed so you don’t get any kitchen odor while cooking. An Instant Pot on the slow cooker setting is also great and is versatile for other things (does the work of 8 or 9 different appliances) and also no odor while cooking.
Make sure the pan you plan to use is nice and hot before you start adding batter. You can use 1/3 to 1/2 of a cup to determine how much should be poured into the pan. I am not sure as I do not use lecithin and see no reason to use it when infusing oil as lecithin helps bind water and oil and when infusing coconut oil you are binding fat to fat. I am doing more research into lecithin now and there will be a feature on it soon. There are certain cooking application where I could see it being useful, but for infusing oil and butter, I do not see that it is necessary, unless I uncover something in further research that I haven’t already.
Alternately, you can do your straining through cheesecloth. Use multiple layers for more filtration. Put your cheesecloth over the top of a large mixing bowl. Secure the sides with a rubber band. Pour the mixture into the bowl. If you can get cheesecloth, this method is often preferred because you can filter more at a time than you can with a coffee strainer.
Take four cups of the chocolate chips and mix in the weed, then melt it in the microwave. Only keep the mix in the microwave until melted. Avoid letting the mix bubble. The one thing to keep in mind when cooking with cannabis infused oil is to keep the oven/stove temperatures at or below 300°F. Last fall, the food writer Laurie Wolf invited me to a dinner party at her home. It promised to be a master class in rustic entertaining. As far as straining, I use a spatter screen (normally used over frying pans to stop spatter, they have a much finer weave than a strainer or screen colander). Just put it over the top of a pan and pour. Easiest way I’ve found and I lose way less oil than using any kind of fabric. After it stops dribbling, I press it, then pour boiling water through it and let drain then press again. Of course, anyone can rinse it as many times as they want, but one additional drain this way usually ends up with very little oil in the drained liquid, so I only do the one. I heat the water and oil again on a low heat, only up to a low boil, which mixes the oils, then shut it off and let it cool, gently transfer to fridge. When it is solid, lift it off the water and I have a translucent butter, very little color, almost no plant material because it settles, along with any other solids, on the bottom of the pan. If, by some chance, it comes out dark with material, it can be put in a half-gallon or so of water and heated again to a low boil, then shut off and left to settle and cool once more. Fridge it, when it’s solid, even cleaner butter.

Set aside two tablespoons of hemp seeds in a small owl. Take the remaining hemp seeds, cacao powder, salt, and walnuts it to a small food processor and pulse for 10 seconds until the mixture is finely ground. Take half of the dates and the vanilla extract and add them in. Puree everything for about 15 seconds and then move it to a mixing bowl. Form 15 to 18 small meatball sized balls and roll them in the remaining hemp seeds to give the a nice covering. Set the balls in a container and let them sit in the fridge for about two hours. You can enjoy them then or wait and store them in the fridge like stated above! Enjoy!
Marijuana cooking with concentrates, namely kief and hash, opens up a whole new world of recipes that can be converted to cannabis cooking. A lot of these recipes contain far less fat than ones that depend on butter or oil to carry the medication, an important consideration for those trying to curb calories or limit fats. Of course cannabis metabolizes better with some fat, but when you cook with concentrates, you eliminate the need to add extra oil or butter to achieve a proper dose.
Cooking with kief is a joy. Its fine texture allows it dissolve almost instantly in warm (and sometimes even cold) liquids and other ingredients like mayonnaise, yogurt, sour cream and more. Hash can be a little trickier. It can come in many textures from dry and crumbly to sticky and putty-like. Dry hash can be sent through a small food processor or coffee grinder to turn it into a fine powder. You can even use a mortar and pestle for this. The sticky variety is best heated in a liquid until it dissolves. Even so, hash can sometimes leave a slight gritty texture, which is why when given the choice, I choose kief. Hamilton Beach makes a line of slow cookers (pictured in this article) that are great for reducing cooking odors when making marijuana oil. I am sure the fine folks at Hamilton Beach did not design the Stay and Go Slow Cooker for this specific purpose, but nonetheless they work great. That’s because it has a rubber gasket on the lid and a clamp you can use to keep the slow cooker tightly closed. People going to pot luck suppers (no, not the kinds with cannabis) love this feature as you can transport food in the slow cooker without it sloshing over. But for cannabis cooks its beauty is in the fact that you will hardly smell the odor of simmering marijuana when infusing butter or oil. At least not until you open the lid. I am not confusing anything and you can choose to “take offense” all you like, but the FACT is MOST people do not like the taste of weed in their food. I get emails from people every day and talk to the public about this day in and day out at my classes, and most people cite flavor as one of the big reasons they do not like edibles. If you like the taste, have a party, nobody is stopping you, it is very easy to make medibles that taste like weed. But this is NOT the effect most people are going for. You can get plenty of medicinal effects without tasting a prominent flavor of cannabis, and your personal preferences aside, this is what the majority of cannabis cooks are looking for.

Process: With burner heat on Low combine 2 cups water, 1/3 cup coconut oil and 1 gram High CBD Hash Oil into a medium saucepan. Keep the heat below bubbling as to keep all cannabinoids available for consumption. Heat gently for 30 minutes, stirring occasionally as the hash oil dissolves into the oil. Place saucepan in the refrigerator or transfer contents into a large enough dish to contain the water and oil and place in fridge. Allow oil to harden and rise to the top of the container (overnight is perfect). Remove hardened oil from water and dispose of water. You now have 1/3 cup of CBD infused coconut oil.
Put the water, marijuana, and butter into a large pot and bring to a boil. Reduce heat and let simmer up to five hours. Turn heat off and run the mixture through a fine metal strainer or cheesecloth into a bowl. Squeeze cheesecloth to remove whatever butter you can from the marijuana. Discard the weed when you’re done. Put the bowl of hot water and butter in the fridge or freezer. When the butter hardens, dump out the water, microwave the butter a bit, and then transfer to a Tupperware container. The butter will keep for several weeks.
Put the half-and-half, cannamilk, cornstarch, salt, and sugar in to a large saucepan and whisk everything together thoroughly. Cook the mixture over medium heat while constantly stirring until it starts to thicken, about ten minutes. Remove the pan from the heat and set it aside. In a seperate container, whisk together the eggs and gradually add in a cup of the cannacream from the saucepan. Place the hot cannacream and to yolk mixture in to the saucepan and continue to whisk it constantly.
Now pour your bread mixture evenly into your 2 greased loaf pans and bake in preheated oven at 350* for 55 minutes. A toothpick can be used to check if your bread is done. When toothpick comes out clean your bread is done. If it doesn’t it will need another 5-10 minutes depending on your oven. If your bread is done remove loaves and let cool on a wire rack. This bread does great for freezing and tastes just as fresh once defrosted.
Now add the chedder cheese and salt whille still mixing everything together until the cheese is fully melted and everything is combined. If you choose to use the Optional Spice , cut the maters and jalapeno chili into small squares and stir into cheese. Pour into a dish of your choice, grab the chips, and find the best spot on the couch because you’re in the zone.
kief: Flickenger appreciates that kief is more potent than regular decarbed bud (making it a more economical ingredient), and also that it cuts down on prep time. “There’s no need to strain, like when you’re using fresh bud,” he says. “There’s no need for people to have it in a Crock-Pot for six hours or strain it through pantyhose to make sure every little bit gets out.”
