Using cannabutter or cannabis canola oil in baked goods are classic ways to make edibles, but a lot of people have started using cannabis coconut oil in their favorite sweet treats since it’s vegan and paleo-friendly. You can also use infused olive oil in your baked goods although it’s important to know that most olive oils have a strong flavor that may change the flavor of your finished goodie.
Start off by grinding up the rosin chips in the coffee grinder until they are a fine powder in the coffee grinder. Set them aside and take a measuring cup and scoop the coconut oil in to it. Put the measuring cup with the coconut oil in the microwave and heat it slowly until the oil is a liquid. Measure out your required amount (I believe you will need 1 1/3 cups total for the two boxes) and pour it in to a pot. Add in the rosin chips and let the mixture simmer for about half an hour to forty five minutes, stirring occasionally. Make sure to keep the heat low. If the mixture is bubbling a lot, it’s too hot. After the time is up on the canna-coconut oil, you need to strain the mixture through cheesecloth to extract the plant matter. Over a bowl, strain the oil in the cheesecloth (be sure that you squeeze the cloth to make sure that you get all of the oil) and mix up the brownie batter following the instructions on the box. Finish cooking them according to the brownie instructions. Once they are done cooking in the oven, you will have some extremely potent and incredibly delicious coconut-canna-brownies made with recycled rosin chips! Enjoy!
Cooking with premade concentrates is also an art that takes a little practice to get right. Cooking with kief is fun and easy. Its fine texture dissolves almost instantly in liquids and fats, sometimes even at room temperature. Hash, however, will take a little preparation, and this also depends on its consistency. Dry hash can be put in a food processor to grind it. The sticky variety needs to be heated until it melts.
I strained my mix once and it worked fine. I then carefully funneled the strained tincture in to the dropper bottles. With this recipe, the mix should fill 11 bottles. I also hung on to the mason jar and stuck it in the fridge to scrape later. Throw away the stuff that’s left in the cheesecloth. That’s trash. But now, you should have a bunch of bottles full of delicious tincture. To ingest the medicine, put a dropper full under your tongue and swish it around your cheeks for about ten seconds. Some people require more than one dropper full. Take what you need and enjoy!
So yeah, testing this hash butter made me melt into the floor and feel like I just wasn’t going to make it to see another day. Let my mistake stand as a reminder that you really need to be conscious of dosing your edibles. Even an experienced edibles writer sometimes gets hungry and eats half of a grilled cheese without calculating dosage first and spends half of her afternoon asking the farmer to remind her that she’s not, in fact, dying.
I always fully decarboxylate before cooking in the slow cooker as the slow cooker does not get hot enough (https://www.cannabischeri.com/featured/marijuana-decarboxylation/ ). Lower and slower will preserve more cannabinoids and terpenes in theory, so I usually opt for that, but it depends, if I am in a hurry, I will infuse on a higher setting. Both have gotten great results in the finished edibles, but I do not have lab tests to compare, unfortunately.
Weed connoisseur Pilcher (Spliffs 3: The Last Word on Cannabis Culture) deals a gnarly collection of 35 starters, entrees, desserts and drinks, all using the kind of pot not generally found in the kitchen cabinet. Nor is this the type of cookbook that provides a list of suppliers for hard-to-find ingredients. But for the reader with a ready stash, these offerings are served up in a well-researched and easy to digest manner, with plenty of tempting color photos and helpful data such as the suggested amount of cannabis bud per person per meal, based on body weight. The key to being a successful ganja gourmet, it turns out, is to first prepare a smooth batch of either Cannabis Ghee or Cannabis Butter. This allows for easier measurement but more importantly ensures that the psychoactive chemical du jour, tetrahydrocannabinol, blends evenly into the dish. Thus three tablespoons of Cannabutter transform perfectly legal mushrooms into Really Wild Mushroom Sauté and the hopped-up ghee is at the heart of an in-your-face Charas Curry, where it mingles with red chilies, ginger and cilantro. Since I generally like to take microdoses of cannabis (about 10mg or less) throughout the day when I need to medicate, I’ve never really delved into the world of making ridiculously strong cannabis oil or butter. I realize that some people need stronger medicine, but those people aren’t me, and I don’t have the tolerance to test strong oil without getting really really really messed up, so I never did it.
Nobody can deny that the combination of kush and OJ is the perfect way to start your day. Not everyone is a coffee drinker, after all. Plus, orange juice is better for you anyway. The following recipe will allow you to create an awesome orange drink that you can bring with you on a hot day as a nice medicated smoothie or you can drink it with your bowl of cereal as an awesome wake and bake. Whatever you choose to do, this drink is absolutely amazing… And medicated.
This author is clearly NOT a cook or baker. Too many questions left unanswered in these recipes, such as "place the dough in a greased pan". How big and what kind of pan? Placed doesn't tell us if one should roll out the dough, pat down into the pan or what the dough should appear like when its done? Too much is left to chance here, including NO measurements for some ingredients! If one is already good at baking, one can possibly wing it with these recipes, but who wants to do that with their weed?
With 4/20 around the corner and more legalized recreational marijuana than ever before, both heavy stoners and first-time tokers are asking the same question when it comes to weed in the kitchen: What is the difference between cannabis oil and marijuana butter? While they do have a lot of similarities, confusing the two can have serious consequences—getting uncomfortably stoned, ruining a pan, or even wasting your weed. To truly understand their unique and similar qualities, we need to look at how they’re made, how they’re used, and where you can get them.
All in all, they’re not so different—but they’re definitely not the same. Cannabis oil can be used to make marijuana butter, but not all marijuana butter is made from cannabis oil. While nearly anyone with cooking experience can make marijuana-infused oil or butter, making cannabis oil should be left to the chemists, and while weed and cannabis oil are mostly readily available in legal states, pre-made marijuana butter can be hard to find—leaving both legal residents and those getting their bud on the black market in the same boat: making it at home.
I messed up a batch. I’m hoping I can save it. I have a MB2 machine, but I didn’t have enough “stuff” (butter and buds) to get the the minimum fill line on there. So I added water to the minimum fill line. I also added some lecithin. Now I have a watery, sludgey mess. Can I put it in the oven at like 220 and evaporate the water, or is the whole batch jacked?
Sayegh knows that THC in the kitchen has an image problem outside of the cannabis world. People dismiss it as a gimmick, something just for mega-stoners, or an opportunity to rip people off. Even Sayegh’s family balked at his career path. They weren’t thrilled when he dropped out of college. They were double un-thrilled when he remade himself as an infused-food gourmand. His mom booted him from the house and told him to stay away from his little brother. But even they’ve come around.
Not to be outdone, Netflix pushed out its own marijuana cooking show this summer: Cooking on High, which pits two chefs against each other to create THC-enhanced dishes for a panel of judges, punctuated by cannabis education from loveable pothead comedian Ngaio Bealum. Though critical reception of the fell flat, some of the chefs and personalities featured within seem destined for another, better executed vehicle for stardom. One standout was Andrea Drummer, whose delectable cod cake sandwich made her the winner of the show’s first episode. Drummer trained at Le Cordon Bleu, and oddly enough used to work as a drug prevention counselor before getting into weed cooking about five years ago.
Wolf pulled a Mason jar of infused olive oil from a shelf and encouraged me to smell it. It had a powerfully green scent. “Olive oil infuses beautifully,” she said. “It’s very earthy.” A jar of infused canola oil, on the other hand, smelled like bong water. Wolf had used the infused olive oil to make the stuffed mushrooms as well as a spinach tart. Those who wanted even more weed could slather their food with an infused feta sauce made with olive oil, garlic, parsley, and red onion. “Strong flavors help conceal the taste,” Wolf said. “It is a challenge to keep the foods from tasting like cannabis. That’s probably the hardest thing about making edibles.” Dessert was a “mildly infused” strawberry trifle in a big glass bowl. For palate cleansers, there were frozen grapes—an old standby for Wolf. “They’re wonderful when people get stoned,” she explained.
Thinking about baking? Well canna-flour is exactly what it takes to make your sweet treats that much sweeter and requires so little preparation, you’d be crazy not to keep a batch on hand. You’re going to be needing very finely ground marijuana for this one, so maybe a few runs through the grinder plus a little added man power to make it dust like. Don’t feel bad about beating the crap out of your nuggets, they’re being put to good use.
The predominant compounds found in cannabis are THCA and CBDA. THCA is the major cannabinoid in Cannabis, while CBDA predominates in fiber-type hemps. THCA and CBDA accumulate in the secretory cavity of the glandular trichomes, which largely occur in female flowers and in most aerial parts of the plants. The concentration of these compounds depends on the variety of cannabis and its growth, harvesting and storage conditions. When locked in their acidic forms, THCA and CBDA are not bioavailable to the body’s cannabinoid receptors. Occurring either naturally within the plant, or upon “decarboxylation” (heating the plant material), these acids are non-enzymatically decarboxylated into their corresponding neutral forms (THC and CBD).
Place egg yolks, remaining 1/4 cup sugar, and salt in a small bowl and whisk until egg yolks are thick and pale yellow. Whisking vigorously to prevent the eggs from scrambling, whisk in about 1/2 cup of the warm milk mixture. Continue whisking in milk mixture, about 1/2 cup at a time until it is all incorporated.. Return to heat and cook over medium low stirring constantly, until it starts to thicken. Do not boil, mixture should only reach about 185 degrees F (if you have a thermometer, if not heat until very hot). Remove from heat, place in a bowl, cover and chill in the refrigerator until very cold, at least 6 hours.
Grind your marijuana. You want to start with dry marijuana. You may choose to stick with only the flowers. Some people will use all parts of the plant. Keep in mind that you will want to strain your oil later. Try not to grind your pot so finely that it will go through your strainer. A coffee grinder or food processor will work well. Just don't turn your marijuana into powder.
Amateur edible makers will often talk about how strong their brownies are, but I don't think they really understand what that means. When I first got into this industry, I went to a dispensary with some friends who wanted to get some edibles. I was hesitant because I'd already had a bad experience with a highly potent edible that didn't taste good and I thought it was a waste of money for me. Meanwhile, my friend was like, "Oh, a 150 milligram brownie, I'll get that!" It was like $30, and I don't even think he knew what he had just bought.
Once you’ve infused your oil, it’s time to strain out the plant material. Cheesecloth is often recommended because it allows oil to pass through while separating it from the ground plant material, but only if you let gravity do the straining for you. Don’t squeeze the cheesecloth to get every drop of oil out. Milking it like this will push out a little more oil but a lot more plant material.
