After making several batches of cookies over the past year, in my opinion decarbing your weed before making butter might not be necessary. I noticed a weaker high when eating a decarbed cookie vs and undecarbed cookie. This is all anecdotal but that’s how I feel. The cooking process while making the butter which is a 3 hour long boil and while the cookies are being baked, should be enough. But those cookies jack me up more than any other edible I have ever purchased. I will always make my own.
Cannabis cooking oils like olive, peanut, or canola are great ways to inject THC into your meal. Cook with it as you would normally, just be mindful of how much you’re using since the effects of ingesting cannabis are slower to set in and last much longer than smoking. Ideas: saute veggies, roast potatoes, marinate meat, or mix up a vinaigrette for your favorite salad.

One major difference between marijuana butter and cannabis oil is their accessibility. In states where marijuana is legal, cannabis oil can be readily found at nearly any dispensary. In one-gram packages, cannabis oil comes in a plethora of consistencies, including shatter, wax, crumble, cake batter, sauce, diamonds, and more. While dispensaries in legal states aren’t hard to find, marijuana butter can be. While many shops carry a mass-produced industrial edible marijuana oil or butter product, other shops only carry smokable cannabis oil and traditional bud. It can be a niche product, and I’d suggest calling ahead to check availability. As someone with the privilege to access legal weed, I’ve still found the most consistent way to have marijuana butter is to make it myself. For those in less marijuana-friendly states, cannabis oil can be impossible to find and using the traditional method of making a personal batch of weed butter is their best bet for experiencing edibles this 4/20.

Finally, they settled on an adaptation of a “fudgy” brownie developed by a magazine-editor friend of Wolf’s, Freddi Greenberg. Wolf’s version includes extra vanilla and cocoa as “flavor disguisers.” She uses a short baking time, to create a gooey interior. Last year, the cannabis Web site Leafly held a pot-brownie contest to coincide with college basketball’s March Madness tournament. Recipes from Martha Stewart, Mario Batali, and Julia Child faced off against pot-oriented recipes from publications like Edibles List and High Times. Wolf’s brownie won. The Cannabist called it “among the most heavenly creations known to ganja-loving humanity.” Wolf said, “It’s pretty fucking delicious, I have to say.”

Marijuana cooking with concentrates, namely kief and hash, opens up a whole new world of recipes that can be converted to cannabis cooking.  A lot of these recipes contain far less fat than ones that depend on butter or oil to carry the medication, an important consideration for those trying to curb calories or limit fats. Of course cannabis metabolizes better with some fat, but when you cook with concentrates, you eliminate the need to add extra oil or butter to achieve a proper dose.

Once the cookbooks lay out the basics, they can get into the good stuff: eggs benedict for breakfast, a New York strip for dinner, and plenty of snacks and cocktails in between. Melissa Parks, a classically trained chef who once worked in research and development for General Mills, is now the executive chef of Las Vegas-based edibles company Vert. She once orchestrated a dinner where she paired tokes of cannabis with dishes that complemented their terpenes. She married a particularly earthy strain called Bio-Diesel (“It had smells of when you drive into a forest over dirt with pine needles”) with a cocoa- and coffee-crusted pork tenderloin in sour cherry beurre blanc.
Start off by preheating your oven to 350 degrees and line sixteen muffin tins with cupcake liners. Using a small bowl, combine the baking powder, flour, salt, ginger, cinnamon, baking powder, cloves, keif or hash, and nutmeg. Stir until it’s well combined and the mixture is smooth. Beat together the melted butter, brown sugar, molasses, milk, and eggs until they are well blended in a separate bowl. Combine all of the ingredients until the batter is smooth and fill each of the lined muffin cup 3/4 of the way full with the mixture. Put the cupcakes in the preheated oven and let them cook for 15-18 minutes. Be sure to test them with a toothpick to make sure that they are cooked all the way through. Let the cupcakes cool before frosting them to be sure the frosting isn’t too runny.

While too much heat will kill your THC, some heat is necessary. Most people do not realize the raw cannabis plant contains no THC at all. It does contain THC-A (or THC-acid). It takes the process of adding heat or decarboxylation to make the chemical reaction that converts THC-A to THC. If you are infusing butter or oil, some decarboxylation is taken care of in the process of infusion, mostly.  But lab tests show that even when making infusions, decarbing first will up the percentage of THC extracted.  If you are cooking with kief you will need to decarboxylate first. Cons: Because cannabinoids are multiplied and long lasting by eating, the effect can be intense, and any amount of THC will be amplified. A narcotic effect can be possible if supplemental cannabinoids are foreign to your body. A tolerance to the high, if any effect persists, will be quick to come within a few rounds of application so it is advised to go with the flow and be patient for the High CBD Hash Oil to work as intended. Some users however report not feeling any effect on High CBD medication because it is mostly non-psychoactive. Allow enough time to feel a desired effect because everybody’s metabolism is different. On average users will feel the effect after 2 hours of consumption but some users report not feeling any effect until 3 or 4 hours after ingesting medication, so you must be patient. Results will vary. Cooking cannabis is about as labor intensive as making candy. To those that have done it before, it can be very easy but the first time can be tough. The ratios of cannabinoids can be tough to navigate so keep an open mind as to how many cannabinoids you may actually consume at one time.
Then, take the tahini, garlic, lemon juice, beans, and cumin to a food processor and grind everything in to a paste. Then, slowly add in your oil, blending the mixture occasionally. Once you’ve added your satisfactory amount of THC oil, you can top the hummus with salt and pepper to taste if you’d like. This delicious and healthy snack is great for pita dipping, chips, or to take the place of mayonnaise in sandwiches. You’ll get a much more intense flavor without the added fat. Enjoy your hummus!
The day after the dinner party, Wolf picked me up in her car, a Kia Soul in a shade called kale green. “The perfect Portland color,” she said. Despite her affinity with the city, she still thinks of herself as a New Yorker, and seems to enjoy shocking West Coast sensibilities. “People here are so earnest,” she said. “I once told a group of people someone’s baby looked like a tampon. They were, like, ‘I’ve never heard anyone say that out loud.’ ”
An important step, decarboxylation, will maximize the THC content of the plant material you use to make concentrated oil. Catalano recommends  baking plant material at 220 degrees for 25 minutes. “Everyone has a different time and temperature for their methods. I prefer that time to preserve terpenes during second processes after the butter is made such as baking,” she says.  BHO can also be decarbed after it has been made by putting the BHO into an oven-safe, parchment paper-lined Pyrex dish and heating it at the same temperature for the same time.
You will need to heat or decarboxylate your kief before using in recipes that don’t call for cooking, as the heat activates the raw plant’s THC-A (or acid) and turns it into THC.  Even if you plan on using hash or kief in a recipe that will be cooked, decarbing it first can up its potency and I highly recommend taking this extra step.  I do this with hash too. Learn about decarboxylation, why you need it, and how to do it at this link.

However, there are some that like to drink lemonade no matter what time of the year it is, warm or cold! This recipe is a great one for cannabis lemonade, using Everclear. Most of the alcohol should be burned off in the extracting process and you can extend the time slightly to make sure that you’ve burned off all of the alcohol.

Adding water is optional not mandatory. I would not reheat with water at this point. Stain the plant material off, if you haven’t already. If there is a lot of sediment in the bottom you can optionally reheat gently over low heat and further strain through a mesh yogurt strainer to further clarify it, but again it is optional. Will it taste too weedy? That is a personal preference but it should likely be OK, especially if you use it in highly seasoned foods that have lots of other flavors going on (a coconut curry perhaps?). Good luck.

You can store these treats in the fridge or the freezer if you like them chilly. This recipe makes about 9 servings so be ready to indulge in these delicious snacks that also happen to be good for you!

Melt the cannabis butter in a small saucepan over low heat and blend in remaining ingredients. Stuff the turkey and/or season it with salt and pepper, if desired. Make a small incision in the skin of the turkey. Force a finger through the slit and break the contact between the skin and the meat. Using a meat injector, squirt half the butter mixture under the skin. Cook the turkey according to your favorite method, basting it with the remaining butter mixture every half hour until it’s done. We cooked it on a Traeger grill and it was juicier and more moist than any turkey I have ever had before.
“What decarbing does is it actually activates the THC or CBD,” Jeff explains. “Decarbing is done through heat and time. When you’re smoking weed, when you light it, the combustion automatically decarbs it, and you’re smoking THC. But when you’re cooking, if you don’t decarb it, you’re cooking with something called THCA. And that A molecule is basically blocking the THC from coming off the leaf into the butter or oil.”
Step 10: After about 5 hours, the butter will solidify and some of the water will turn to ice. Take each container one by one over to the sink, take off the lid, and with one hand supporting the ice block, turn container upside down and release. Some water will come pouring out, and the ice just needs to be scraped away from the main butter block. You should be left with a smooth, round slab of light green butter.

Strain the butter and refrigerate. Choose a storage container for your butter. Cover the top with cheesecloth[8] for straining. Use a rubber band around the top of the container to hold the cheesecloth in place. Pour the mixture through the cheesecloth into the container. Squeeze the solids to get as much butter out as possible. Store in an airtight container in your fridge for later use.

A longtime cook and marijuana enthusiast, Jeff was inspired to combine the two after a friend’s mother became sick with cancer. She didn’t like to smoke, and couldn’t bear the weed-heavy taste of pot brownies, so Jeff started experimenting with a wide range of recipes that would deliver the benefits of cannabis without the strong taste.
This product may be applied to an “oil rig” for the highest intensity medication possible. An oil rig is a device used much like a traditional water pipe, or bong, which uses a heated element, usually titanium or quartz, to heat up the High CBD Hash Oil to a critical temperature. The oil is vaporized, channeled through water filtration for cooling, and inhaled by the user in a large concentration. This produces a less-bodied smoke that is not as thick as cannabis-plant smoke but equally expansive in the lungs and cough inducing.

Put the cap on the milk jug and shake it for 5 minutes, then put it in the freezer for 5 minutes. Repeat the shaking/freezing process two or three times. Now, grab the coffee filter and strain out all of the liquid in the jug. Make sure to get all of the liquid strained in to the bowl. With your freezer set to the highest setting, put the bowl of water in the freezer. Be very careful with it and try not to disturb it too much. The bowl should sit in the freezer for around 45 minutes, or until the fluid begins to form a delicate ice layer. It’s also a good idea to tap the bowl lightly with a spoon. The trichomes are in the water and the most dense, heavy ones will fall to the bottom of the bowl.
In regard to health, there are federal standards in the Occupational Safety and Health Guideline for permissible workplace exposure for n-butane. The recommendation is no more than “800 parts per million as an eight hour time weighted average.”  Although you’re probably not blasting butane for 8 hours at a time, it is important to know how to be safe around this gas. Butane exposure toxicity includes temporary and long-lasting symptoms like hallucinations, irritability, social withdrawal and central nervous system damage, according to the same federal report. Limit your exposure and be smart.
A slow cooker is my favorite way, but you could also infuse on the stovetop in a double boiler (it just takes more babysitting). If you are going to buy a slow cooker temp variables are good to have for sure. I like the Hamilton Beach Stay and Go slow cooker because it clamps closed so you don’t get any kitchen odor while cooking. An Instant Pot on the slow cooker setting is also great and is versatile for other things (does the work of 8 or 9 different appliances) and also no odor while cooking.
Take the cannabis, lime juice, water, green onion, and the oil and place it in the crock pot. Cook the materials on low for about two hours. Once two hours has gone by, place the apple cider vinegar, soy sauce, tomato paste, chili powder, garlic, Worcestershire sauce, honey, ground ginger, cayenne pepper, and the apricot nectar in to the crockpot with the previously cooked mixture. Mix everything together well and cook on low for another hour at least. Be sure to stir the mixture occasionally. Once the sauce is done cooking, store it in an airtight container in the fridge. The recipe will yield about two cups of sauce and is definitely perfect for your backyard barbecues! Enjoy!

Last fall, the food writer Laurie Wolf invited me to a dinner party at her home. It promised to be a master class in rustic entertaining. Wolf lives in a floating house on the Willamette River, just south of Portland, Oregon. When she has people over, she told me, she has a few rules for herself. First, “have as much done in advance as possible.” She goes so far as to set the table the night before and put out serving platters with sticky notes assigning their contents. Next, be sure to check your guests’ dietary requirements. These days, everybody has a health concern or a food allergy, and she says, “I always try to accommodate in a big way.” Some of Wolf’s recommendations are more esoteric. For example: “Start with a sativa and end with an indica.” This applies only to Wolf’s area of expertise: marijuana edibles.
Wolf, the younger of two children, grew up in Riverdale, a wealthy neighborhood in the Bronx. Her mother, a teacher, could be “extremely uptight,” she told me. Her father, a dentist, had anger issues. Good food was in short supply, as was good fun. “Looking back, I realize my parents were not at all happy with each other,” she said. She attended Calhoun, at the time an all-girl’s school, in Manhattan. One day, an administrator called to inform her parents that several girls were suspected of having smoked marijuana. Her mother rightly guessed that Laurie was one of them. “I got home to find her crying hysterically,” Wolf said. “She was, like, ‘How did I go wrong? You’re an addict! You let us down!’ ”
While some purists will tell you this is hearsay, adding water to your infusing process is a nifty trick. This way, you can infuse at a lower temperature. The amount of water you add is not important, but try to use at least as much water as oil or butter. The water boils off. You can also see the difference in your “washed” end product. It is not as green.
